Sweet Potato Noodles

These noodles are gluten-free, full of goodness and taste amazing. Every time Jeevi makes these noodles for lunch at a Happy Buddha retreat, guests keep on asking, ‘Can we get the recipe, please?’ His answer has always been, ‘Very soon’. The wait is over and the recipe is finally here.

Ingredients

  • 220 grams sweet potatoes noodle (dry).

    1. 1/4 cup tamari or soy sauce

    2. 2 tablespoons mirin

    3. 2 tablespoons rice vinegar

    4. 3 tablespoons sesame oil

    5. 6 dry shiitake mushrooms, soaked in hot water for 20 minutes and sliced into small pieces

    6. 1 cup carrots, shredded

    7. 1 cup bok choy

    8. 1 cup broccoli heads (optional)

    9. 1/2 cup green beans (optional)

    10. 1/2 cup finely sliced red capsicum (optional)

    11. Roasted sesame seeds (optional)


Method

Prepare the noodles

  • In a large pot boil enough water to fit the noodles. Cook the noodles in boiling water for 5-6 minutes or until translucent and tender.

  • Drain and rinse the noodles under cold running water.

  • Since noodles are a bit long, cut them into smaller pieces using scissors. If you’re an expert chopsticks user, leave them long

Cook the veggies

  • Heat a pan over medium-high heat.

  • Add 1 tablespoon sesame oil and allow to heat up. Add your favourite veggies, such as bok choy, broccoli, mushrooms, green beans, red capsicum.

  • Cook for 3-4 minutes

  • Turn off the heat and let the vegetables cool down.

Put it all together

  • In a big bowl whisk together soy sauce, mirin, rice vinegar and sesame oil.

  • Add all vegetables, including mushrooms, to the bowl, followed by noodles. Gently stir to combine all the noodles and vegetables.

  • If you don’t think there’s enough salt, add another tablespoon of tamari/soy sauce.

  • Serve on a bowl or plate with a sprinkle sesame seeds.

Shopping notes

You can buy the sweet potato noodles from Asian grocery stores (Chinese or Vietnamese). Jeevi gets his noodles from ‘Save More’ Vietnamese grocery store in Marrickville. For all the sauce ingredients, visit Coles, Woolworths or an Asian grocery store.
